Saffron (Crocus sativus L.) has been traditionally used as food spice for centuries. Saffron needs a very particular weather condition – dry & cold regions with altitude > 1000m which is perfect in Iran. Approximately 230,000 saffron flowers are required to make 1KG of saffron stigma. Each saffron contains only 3 stigmas & the entire harvesting process must be done by hand to preserve its content, hence making it one of the most expensive and valuable ingredients in the world.
